By "3 lat extensions" you mean 3 upper back exercises right?
Why not just do two upper back, 1 or 2 mid back and one lower back(like deadlift)?
I think you might be over training a bit your upper back(or back in general), unless your goal is to speed develpment for your upper back. Even then it might still be considered over training a bit. The problem Im seeing here is that if your diet is not in par with your high volume training you're not going to grow much. In general you shouldn't be sore for more than 2(or 3) days after a grueling iron session.
If you have experienced gains with this high volume method, then stick to it. But if not, I would advise to diminish the # of exercises a bit(by one or two). By the way, keep eating BIG!!!
