sometimes i run out of ideas as far as what to make to eat. i figured this might be a good way to learn some new stuff to cook.
this is what i ate tonight
ahi tuna seasoned with mrs dash, pepper, and olive oil cooked on a grill pan. i topped it with this:
peanut sauce recipe
3 tbl spoons of natural peanut butter(3 turned out to be too much for 2 fillets, i suggest 1 and a half)
1 tablespoon of water
juice from 1/2 lemon
2 tablespoons of balsamic vinegar
1 heaping tablespoon of brown sugar
^^^^^
mix all those together and toss them in the microwave to soften the peanut butter. then stir to thicken it back up a lil bit. the ingredients might sound as if they don't go together but trust that shyt is good.
also some honey roasted veggies. cut up some colored bell peppers, squash, zucchini and half and onion. coat with some olive, mrs dash, pepper, and honey and toss them in a 450 degree oven for 20-30 minutes or they are soft enough for your taste.

i made some butternut squash soup tonight that was orgasmic. sweet mother of God.
cut 1 large organic butternut squash in half (the long way), drizzled with olive oil, salt, pepper, and laid the halves on top of about 5-6 sliced garlic cloves on a baking pan. roasted it CUT SIDE DOWN at 375 for about 45 minutes.
when done, scooped out all the flesh and put in the blender. threw the roasted garlic in there too.. and added 4 cups chicken stock, 1 8-oz package of reduced fat cream cheese, and half a red onion, sliced. pureed it all together for a minute or 2. transferred to stovetop in large pot, and added a tsp cinnamon, tsp yellow curry, 2 tsps marjoram, and 2 tsps cayenne pepper.
shyt came out creamy, rich, and butters.. w/ a nice spicy kick from the pepper and curry.

I really can't make a lot. Right now I've been surviving off organic peanut butter and wheat bread.
More recipes are appreciated.

lol@it being the butters, it does sound good. i might try that tomorrow.
keeping it simple tonight.
whole wheat penne pasta, steamed broccoli florets, and that perdue chicken breast that comes already chopped up. also throw in some sauteed minced onion, garlic, and mushrooms. topped with some grated parmesan.
also, them ziploc microwave steam bags are the butters too.

i LOVE those damn things.. esp since i'm too lazy to go purchase a stovetop steamer.
what i really like about 'em is that you can toss is both frozen and fresh veggies together, and they all come out tasting like fresh.. i like to do fresh asparagus and bell peppers mixed with frozen snap peas & broccoli.. add butter spray (0 calories), garlic salt, and cracked pepper.. and some shredded parmesan on the top.

Ha! that soup did not come out right. i had to toss it out. i'll try it again some other time.

Made Chicken and Veggie Stir Fry Last night
-Sliced up Large Red Onion in Thin long slices
-Sliced up Green Pepper in thin Slices
-Baby Portabella Mushrooms
-Cut pieces of lean chicken Breasts
-Seasoned with a tad bit of Creole Seasoning and garlic salt
-Added some Crushed Red Pepper (Cuz I love Spice)
-Cooked on high in a pan with Olive Oil for about 10 minutes

This is a snack that I got from epicurious that is pretty damn good...and fast.
BLT with Acovado Spread
Ingredients:
Spread
1 extra ripe avocado
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
Sandwich
8 slices turkey bacon
8 slices whole wheat/whole grain bread
8 leaves romaine lettuce
2 medium tomatoes, cut into 12 slices
1 small red onion, thinly sliced
Preparation:
Combine spread ingredients in a bowl. Mash until smooth and set aside. Prepare bacon as directed on package; drain thoroughly on paper towels. Toast bread. Place 4 slices on 4 plates. Spread an equal amount of avocado spread on each slice. Top each with 1/4 of the bacon, lettuce, tomato, and onion. Cover each with another slice of toast. Cut sandwiches in half and serve immediately.

1 tsp each low fat or fat free sour cream and yogurt
1 tsp spicy brown mustard
pinch of dill seasoning and black pepper
mix it all up and throw it in a pita along with some shredded lettuce.

i roasted a chicken tonight.
preheat the oven to 375, mix together a couple teaspoons of store bought minced garlic, olive oil, basil, thyme, & rosemary. rub it all over the chicken, including inside the cavity and under the skin. spray some pam in a baking dish and place the chicken in it with the breast down so the juice can run into it. bake anywhere between an hour and a half to 2 hrs depending on the size of the bird. the breast meat comes out so juicy.
