This is a good initiative and we all(fitness forum peeps) should post whatever healthy recipes/foods we might know. I don't have any at the moment, but shall post some soon.

soon as i saw it i knew it had to be

my favorite snack, esp when im having bad sweet tooth (and i LOVE LOVE sweets--i dont deny myself just do it in moderation)...

yogurt smoothie
1 cup (8oz) fat free yogurt (sweetned w/ splenda)=120 calories
1 cup frozen fruit (i get a huge bag from costco that has=peaches,strawberries,grapes,pineapple,plus other)=60 calories
1/4 cup skim milk=~20 calories
artifical sweetner to taste

blend an eat. i like mine chunky cause it slows me down and keeps me from sucking it down too fast, lil

if youre doing weight watchers its about 3.5 points
i got plenty others just a start

Heres a quick meal that takes little or no effort to prepare and you can modify it but dont go too crazy with the sour cream or cheese or else nutritional content will go to hell

Healthy Burrito

You need (you can remove what you choose from this)

*1 chicken breast (Boneless skinless)

*burrito size tortilla (Misson whole wheat tortilla is 31 carbs but 21 of it is fiber so its only really 10 grams of carbs)

*can of black beans

*salsa (Im using Paul Newamans with pineapple right now)

**low fat sour cream- serving size is 2tbl spoons but I use less

**lowfat shredded cheese- serving size is a 1/4 cup but i use way less, I just sprinkle it lightly

veggies (lettuce tomato etc)

I cook the chicken(season how you want, I just youse adobo, seasoning salt or jerk seasoning) in the oven on broiler or use foreman grill if you want, then I shred it after its cooked in mini chopper/food processor...you can cut if youd like, but this is easy to me

I open the beans into a tupperware(so i can store and get some when needed) and heat up about 2-3 tbl spoons in an lil bowl

You can heat up the tortilla if you want for like 10-15 secs in microwave

Put the beans and chicken in there

add cheese, salsa and sour cream (all optional) salsa adds most flavor

close tortilla and there you have it.


Its low in carbs and fat, ladies may want to use less chicken 1/2 the breast becasue it is BIG when completed



I also cook about 7 breats at once and I shred them all and place each shredded breast into individual ziplocks so I know Im getting all the protein I need at the meal. I just heat up one bag in a bowl with some beans and slap it in the tortilla and add the extras...Im done in about 4 mins and Im comfortable for a few hours, feels like Im at chipotle/ la salsa/ but Im at home :ohmy:

If you are on a bulking cycle ad some brown rice to it to up the carbs or more beans. Id suggest reading the food labels and then adjusting serving size to fit your needs dependant on your diet.

I find it delicious and it is nutritious :yes:

my "famous" turkey chili......its spicy and sweet at the same time

1lb 98% FF ground turkey
1 pk mccormilk chili seasoning (i use the mild one plus add my own spices that i cant tell you about. if i do i gotta kill you, lol)
1 6oz can tomato paste
1 can low sodium crushed tomatos (with green chilis if you like spice)
1 can black beans
1 can dark red kidney beans (they taste better than light red to me)

brown the meat.
add everything else
simmer for about 30 minutes.
add some sugar or artificial sweetner (since im watching calories i use 2 pks sweet n low 2 packs equal)

real good over jiffy cornbread.....but of course sis is preserving her sexy so i eat it without bread or biscuits

this recipie is low in fat and high in fiber. its very filling. because of the beans you will be farting up a storm though, lol

nikkas always want me to make these erry superbowl, plus my quiche and homemade apple pie

when i was doing low carb i ate these on the reg. the amount of honey and ketchup is pretty negliable so i had no problem losing when i ate these

3 lbs chicken pieces (wings, legs and thighs best. this doesnt do good on chicken without bone--ie. breasts)
2 tblsp olive oil (tastes better than reg veggie oil)
1/2 cup soy sauce
2 tblsp ketchup
1 cup honey
1 glove garlic, or minced garlic (trust sis garlic makes a difference!!)
dash of salt and pepper, plus again other spices if i tell you i gotta kill u, LOL

heat oven to 375. put chicken in a baking dish. mix together everything and pour over chicken. bake for 1 hour or until sauce is carmelized. occasionally stir your chicken pieces so that they are coated evenly

this comes out sweet, tangy and sticky.....if i make w/ dinner ill do some homemade mashed potatos and string beans

one of the best things for dieters is FISH. extremely low in fat and calories, and high in protein. glaze fillets with some olive oil or lite butter/fat free butter spray, season with dill, pepper, salt, and bake at 425 for about 15 minutes or until the fish flakes. squeeze fresh lemon juice on it and it's good to go.

also, for sandwiches and wraps.. you can make ranch sauce for chicken ranch wraps that is very low in calories and fat free by mixing a package of dry hidden valley ranch dressing mix with a few tablespoons of fat free mayo or miracle whip. or lite, if you can't bear the fat free.

I make a mean garlic/oil sauce. Chop up a few cloves of garlic, saute with olive oil, salt, pepper, oregano and red pepper. Then add it to w/e pasta mix you want. I love it with sundried tomatoes, carm onions, chicken or sausage and penne...bangin.

I love this thread, really helps. Here is a simple one:

Pears and cottage cheese or pineapple and cottage cheese. Also, don't be afraid to throw some fruit into your cereal, other than bananas, pretty good.

yay I love posting low fat recipes! This one is like boneless buffalo chicken wings but lower in calories than the real thing. You can add pretty much whatever seasonings you want at 1/2 to 1 tsp each.

Boneless Buffalo Chicken Bites
1 cup flour
2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper or season salt (more or less to your tastes)
1/4 cup egg beaters
1 Tablespoon skim milk
1 pound boneless, skinless chicken breasts
non-stick cooking spray

sauce:
1/4 cup Frank's red hot sauce
2 Tbsp fat free margarine spread
2 Tbsp water

Preheat oven to 475. Combine flour, salt, seasonings & pepper in shallow dish. Whisk egg and milk together in a seperate shallow dish. Cut chicken in semi-large bite size pieces (2-3 bites each piece). Dip each piece of chicken into egg mixture then into flour, then dip chicken into egg mixture again and into flour mixture again. Repeat the process for all chicken, continuing to double dip. Prepare a large baking sheet with a layer of foil sprayed with non-stick cooking spray (foil should go dull side up). Arrange chicken on baking sheet. Before placing in ove, spray tops of chicken bites with a quick coating of non-stick cooking spray. Bake chicken for approx 15 minutes or until begins to lightly brown and chicken is cooked thoroughly. Turn heat up to broil and move baking pan to top of oven. Broil on low for 3-4 minutes or until the surface is golden brown and crispy. Let chicken cool before coating with sauce

Sauce prep:
Combine hot sauce, water and margarine spread in microwave safe dish and microwave for approx. 3 minutes or until it starts to bubble and margarine is just about melted, stir throughly. When chicken is slightly cooled place into a container with a snap lid. Pour hot sauce mix over chicken, seal the lid and toss to coat. Serves 4

Nutritional Info
per serving 205 calories, 3 g fat, 29g protein, 13g carbohydrates, 1g dietary fiber, 69mg cholesterol, 1035mg sodium.

Arrange on baking sheet covered with foil sprayed with non-stick cooking spray. Bake at 475 for 15 - 20 minutes depending on thickness of filets, fish should flake apart easily with a fork. Turning during baking is not necessary. For crispier breading broil on low for about 3 minutes on the top rack of your oven. Approx nutritional values: calories 212, 2g fat, 325mg sodium, 80 mg cholesterol

3 Bean Chili


INGREDIENTS
1 tablespoon olive oil
1 small onion, diced
1 pound lean ground turkey breast
1 14 1/2-oz can diced tomatoes with jalapenos
1 10-1/2 oz can chickpeas, drained
1 10-1/2 oz can black beans, drained
1 10-1/2 oz can kidney beans, drained
1 10-1/2 oz can low-soduim chicken broth
1/4 teaspoon salt
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1/8 teaspoon cayenne



PREPARATION
In a large pot, heat the oil on medium-low. Add the onion and saute until soft (about 3 to 5 minutes). Add the turkey and brown it (about 5 minutes). Add the remaining ingredients. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes.

dope thread. here's one i posted in the flax seed oil thread, this makes a good snack in between meals

you'll need:
-1 cup of plain fat free yogurt
-fresh sliced pineapple
-1 tbsp of flax seed oil
-2 tbsp of ground flax seeds, you can buy a coffee grinder at publix for under 10 bucks, it's very important to grind the seeds, they're useless if you eat them whole.

put all the ingredients into a bowl and mix until the oil can't be seen. it's a great way to get more than enough of your daily flax fix and it tastes pretty damn good.

here's another one i like

makes 2 servings:
-1 6 oz can of low sodium chunk white tuna
-1 hard boiled egg (or 2) chopped
-chopped onions
-chopped pickle
-shredded cheese of your choice
-2 tbsp of olive oil
-canola oil mayonase (found at health food stores)
-two loafs of whole wheat pita

-drain the can of tuna and mix it with the amount of mayo you like
-add the chopped onions, chopped egg, pickles, cheese and olive oil and mix it all into the tuna.
-cut an opening in the loaf towards the top (not in half) and pack the loaf with the tuna mix. should be full with half of the mix which will leave you with the other half for later. you can add tobasco sauce to change it up.

Even the real stuff is laced with mercury, not to mention parasites. Ground turkey is a breeding ground for salmonella. I hope you wash your hands and cook it well.

I know y'all don't really eat this sh!t regularly, lol. :gag:

I made this Wild Rice and Cranberry Salad for one of my two thanksgivings, it was really light and tasty esp compared to the usual heavy holiday foods. It got RAVES from the womenfolk, but not so much from the meat and potatos crowd (many skipped sampling it altogether I noticed). Anyway, I will definately make this again! It's not too sweet or too sour; is a strange mix of ingredients (I thought) but really works~

Cranberry and Wild Rice Salad

Ingredients

# 1 cup wild rice
# 1 teaspoon salt
# 1/2 cup walnuts
# 8 oz. cranberries, fresh or thawed frozen
# 1/2 cup sugar
# 2 tablespoons olive oil
# 1 tablespoon rice vinegar
# 3 green onions, chopped, including green tops

Directions

1. Combine wild rice, salt and 1 quart water in a large saucepan. Bring to a boil over high heat. Cover, reduce heat, and simmer until rice is tender to bite and most grains have split open, 45-60 minutes. Drain in a colander and let cool.

2. Meanwhile, spread walnuts on a cookie sheet and toast in a 325° F oven until lightly golden, about 10 minutes. Coarsely chop.

3. Sort cranberries, discarding any stems and bruised or decayed fruit; cut each cranberry in half.

4. In a saucepan over medium-high heat, stir the sugar and 1/2 cup water until the sugar is dissolved and mixture boils. Remove from heat; stir the halved cranberries. Gently stir occasionally until insides of cranberries have turned red but are still firm, 8 to 12 minutes. Pour through a strainer into a bowl, reserving the cranberry-sugar syrup.

5. In a large bowl gently mix wild rice, cranberry halves, oil, and vinegar. Stir in 2 tablespoons cranberry syrup; taste and add up to 1/4 cup more syrup to sweeten and moisten salad as desired. Stir in green onions. Cover and chill for at least 4 hours or up to 1 day.

6. Stir in walnuts before serving.

Serves 8.

Carbohydrates: 21.5g
Calories:160.0
Protein: 2.2g


They say serve chilled but room temp is okay too... I bet warm would even be good... and if you set this out as part of a feast, many more than 8 ppl can have a taste. It's really pretty looking on the table/plate.

4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
2 tablespoons sour cream (optional)
DIRECTIONS

Preheat oven to 375 degrees F (190 degrees C)
Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.
