I'll chronicle what I eat and simply put, toss a letter grade or approve/dissaprove it and why. Suggest replacements as needed.
Monday:
Coffee w/creamer and Equal
Tuna Salad sandwhich [home made] on white bread and small bag of sunchips.
[2] Chicken Salad Sandwich on white bread with 2 slice american cheese
Clementine Orange
Tuesday:
3 egg white omlette with chicken, onions, peppers.
Cup of coffee with creamer and equal.
[still going on of course]
I'm sure you enjoyed that game last night...
anyways, replace the white bread with wheat or multi-grain. That's really simple and in my opinion tastes better.
But, yo, what's your goal. You trying to tighten up or lose a bunch of weight or what?

Depending on how big your chicken and tuna servings are, it seems like a small amount of protein for a man, perhaps even small amount of nutrient rich calories as well. No veggies? Are you trying to cut or gain?
I suppose both the tuna and chicken sandwich has mayo in it. Plus the cheese, you are adding a lot of fat. That sandwich is probably like 20+ grams of fat alone.
Also instead of equal have you tried splenda? Hasn't proved to cause cancer like equal.
And I rarely eat fruit because it's so high in sugar. Most fitness nuts suggest eating veggies over fruit.

in regards to the tuna and chicken salads, they contain Kraft Horseradish sauce which is a pretty good mayo substitute, has identical consistancy, plus tastes 100x better. 1.5 g of fat per serving and 15 cals.
in terms of goals, i could get stronger and leaner in general. I'd perfer to cut probably.
and i definitely lack veggies unless it is to add to a meal like onions in an omlette. I did forget a pickle i ate yesterday.
Tuesday continued:
Went to Mongolian BBQ;
1 bowl of chicken/noodles/onions/white rice/pinapple+bbq-type sauces/seasonings
1 small bowl of shrimp/noodles/bbq-type seasonings
2 beer
1 Apple Juice
1 [pretty big] Chicken Breast Boneless/skinless
1 pickle

in terms of bread, by the way, this was the first loaf of bread I've eaten in almost a year. I usually buy Wraps from wholefoods and make pita type sandwiches.

You need to increase your protein intake and cut out a lot of the extra little stuff like creamer, beer, etc.
